Recommended serving size: 6-8 pax
Ingredients:
6-8 pcs of abalones, cleaned and gutted, put back to the shells
5 green onion/shallot (white part), cut into 5 cm long and into strips
2-3 slices of ginger, cut into strips
5 stalks of coriander, cut into 5 cm long
For Oyster and Soy Sauce dressing:
1 Tbsp. oyster sauce
½ Tbsp. light soy sauce
½ cup (125ml) water
½ Tsp. brown sugar
1 Tbsp. olive oil (or sunflower oil)
For Dark and Light Soy Sauce dressing:
½ Tbsp. dark soy sauce sauce
½ Tbsp. light soy sauce
½ cup (125ml) water
½ Tsp. brown sugar
1 Tbsp. olive oil (or any preferred cooking oil)
1 pinch of salt
Step 1:
Combine oyster sauce, soy sauce, water, sugar and oil in a saucepan, bring to the boil, reduce heat to simmer.
Step 2:
Steam abalones with shells for 5-10 minutes depending on the heat of your steamer (do not overcook them, they will be tough).
Step 3:
Preheat a serving plate in microwave or oven. Arrange steamed abalones on the preheated plate, pour hot dressing all over the abalones, sprinkle shallot, ginger, coriander. Sprinkle ground pepper on top and serve.
